A Unique Open-Air Dining Experience in Provence

A long communal table set beneath centuries-old plane trees. The Château as a backdrop. A chef cooking live just a few metres from the guests. Music begins with the aperitif and carries the evening through to midnight.

La Grande Tablée is an ephemeral bistronomic banquet — a one-night-only summer experience set within the exceptional natural surroundings of Château d’Astros.

The Allée de la Bergère is one of the most remarkable perspectives within the estate’s historic parkland. For one evening, it becomes an open-air dining room. The concept is intentionally nomadic: it can move throughout the estate from one edition to the next, adapting to the seasons, the light and the landscape. Its fleeting nature is precisely what makes it so special.

Eric Maillet: Between Provence and Japan

Born and trained in Marseille, Eric Maillet spent his early years at Le Petit Nice, Gérald Passédat’s three-Michelin-starred restaurant, before opening Cédrat in 2018.

For eight years, the Marseille restaurant became the expression of his culinary identity: precise Mediterranean cuisine shaped by the seasons, local producers and a distinctive appreciation for citrus and balanced seasoning.

In 2026, he opened Koshō alongside Mama Kyuna, marking a new chapter in his journey. Inspired by their travels across Southeast Asia and Japan, Koshō is a Mediterranean izakaya where raw fish, grilled dishes and sharing plates meet the finest ingredients from Southern France.

The result is a generous and vibrant cuisine that blends Japanese influences with Mediterranean roots while always remaining centred on the quality of the product.

The restaurant’s name reflects this philosophy. Koshō refers to the spicy element of yuzukoshō, the Japanese condiment made from citrus and chilli. A subtle nod to a cuisine that embraces contrast, precision and travel while remaining deeply connected to seasonality and respect for producers.

What sets Eric Maillet apart is his ability to bring different culinary cultures into conversation naturally and authentically, without artifice or trends. His signature is instantly recognisable.

The Menu

For La Grande Tablée, Eric Maillet has created a four-course menu celebrating the flavours of July.

Welcome Aperitif

Guests are welcomed with the estate’s first wine of the evening while discovering the setting and settling in beneath the trees.

Marinated Tomato

Nectarine, roasted tomato and basil pistou, pangrattato and pickled shallots.

Beef Tagliata

Slow-cooked aubergine, baba ganoush, blackberries, satay sauce and reduced teriyaki jus.

Vegetarian option: Perfect egg.

Roasted Apricot

Rosemary crumble, creamy yoghurt and pollen granola.

Food & Wine Pairings

The pairing experience is the thread that runs throughout the evening.

Five wines from the estate are served where they were produced: one glass during the aperitif and one carefully selected wine with each course.

Enjoying the wines of Château d’Astros at the estate itself, at the very moment they express their character best, is an experience no traditional tasting can fully replicate.

The pairings have been designed in this spirit: each wine extends the flavours of the dish, and each course naturally leads to the next.

For guests who prefer not to consume alcohol, a carefully crafted non-alcoholic pairing is also available. Water is included throughout the evening.

Evening Programme

7:00 pm – Welcome to Château d’Astros. First glass served alongside live music from Sud Music Event, a local acoustic duo performing French and English classics with a contemporary pop influence.

7:30 pm – Guests take their seats. Dinner service begins.

8:30 pm – Live music continues.

Until Midnight – The evening unfolds beneath the trees and throughout the estate’s parkland.
